Freshly Ground Certified Organic 'Turkey Red' Whole Wheat Flour - Turkey Red is an old heirloom variety of wheat that was brought to Kansas in the late 1800s. It has a different gluten profile from the modern dwarf varieties that is inherently less allergenic and has superior baking quality. Storage Tip: Freshly ground flour still has the wheat germ and natural oils in the seed and will lose upwards of 90% of its nutrition after 72 hours on a shelf, so keep it in the freezer!
